I'm not sure where on this magnificent earth you are currently located but here in Central Florida it is hot and humid!! When summer time comes around I like to keep my freezer stocked with yummy cool options to turn to. However, the problem with most store bought ice cream, gelato, or popsicles is that they are high in sugars and fats plus the dairy can be quite hard on most peoples stomaches. Because of this, I went on a search for a healthier option and came up with this super easy, super dreamy dessert!
Papaya Pineapple Vegan Gelato
- 3 cups chopped papaya
- 1 cup chopped pineapple
- 1 can coconut milk
- 4 tablespoons honey
- a pinch of sea salt
- a pinch of nutmeg
- 2 pinches of cinnamon
- In a food processor combine the papaya, pineapple, coconut milk, honey, salt, nutmeg, and cinnamon. Pulse until completely smooth.
- Pour the mixture into a large zipper-lock freezer bag. Freeze the mixture with the bag laying down in the freezer (so you end up with a thin, breakable layer of mixture). After the mix has completely frozen, break it up into pieces (while still in the bag), then transfer the chunks back to the food processor and blend until smooth and creamy. Take this smooth gelato and transfer it to a freezer safe container and let it set back up.
- To serve, remove the container from the freezer about 10-15 minutes beforehand to let it come to the perfect texture. Serve and enjoy!
